Writing a thank you poem
A thank you poem works when it proves you noticed. Gratitude in the abstract sounds like an obligation being discharged; gratitude for one specific thing sounds like it was felt.
Three things that make it work
Name the thing
Not their kindness. The lift to the airport at five in the morning. The reader should be able to tell the poem was written for them and nobody else.
Say what it cost them
Acknowledging the trouble someone went to is the difference between thanks and a receipt.
Do not over-thank
Excessive gratitude puts the other person in an awkward position. Say it once, clearly, and stop.
What to avoid
Words cannot express. If words could not express it you would not be writing a poem.
An example
You drove ninety minutes each way and pretended you had errands nearby. There are no errands out there. I checked. There is nothing but fields.
